Circulo

Circulo tequila is distinguished from other spirits by its long meticulous process, which results in a refinement that rises to the expectations of the 21st century palate.

“Teuchitlán Tradition: “Guachimontones”

Círculo Tequila takes its inspiration from the ancient civilization of Guachimontones, which consists of a number of circular ceremonial centers located in the foothills of the Tequila Volcano in the state of Jalisco, Mexico.
Guachimontones has a unique architecture of circular pyramids that can only be found in this region. An uncommonly advanced civilization for the time inhabited this area more than 2000 years ago. Since ancient times the circle has been attributed sacred qualities that are permanently present in the universe, both physical and spiritual. More than just a shape it is a continuously moving line that represents all cycles in life in a constant evolution. Círculo Tequila represents the evolution of tequila as it continuously evolves to suit the demands of the people of today.

PROCESS

1. AGAVE SELECTION

Only the best and ripest agaves are selected at an age of 7 to 13 years. The agave spikes are chopped off and the core is sent to the next stage.

2. COOKING

The agave cores are split in half and stacked inside our brick ovens in order to derive traditional mineral flavors. Círculo believes in taking its time and therefore takes around 48 hours to complete this stage.

3. SYRUP EXTRACTION

After being cooled, the cooked agave cores are shredded and pressed to extract the agave syrup that will be sent to the next stage.

4. FERMENTATION

The liquids and syrups are transferred to stainless steel tanks and then champagne yeast is added for fermentation. Fermentation takes a whole week to complete while classical music is played sending positive vibrations to the living yeast as it works converting sugars into alcohol.

5. DISTILLATION
After fermentation Tequila masters carefully separate the alcohols produced to create a unique profile. From this stage we get the first product: Círculo Tequila Silver.

6. AGING IN OAK BARRELS
From distillation a portion of the tequila is sent to age in new American white oak barrels to extract delicious wood flavors. Reposado is aged from two months to a year, Anejo is aged for 1 to 3 years, and Extra Anejo is aged for three years and up. The cooking, fermentation, distillation, aging, and bottling of Círculo Tequila meets the highest quality standards in the world and are conducted under the supervision of a team of professionals.
